We may never know who Sarah Stephens mother was because she may have been a member of the Cherokee tribe. I'll try to explain.

Two of Joseph & Sarah Ellers' sons (of Buncombe Co. NC) had their biographies written in history books. Their youngest, Joseph Michael "Franklin", was written in the 1903 History of North Idaho. He stated his mother was Sarah Kirkland. However, he was only 11 yrs old when Sarah died in 1846. I searched for a Sarah Kirkland in the Buncombe County area, but never found one. There were several Kirklands from western North Carolina that claimed descent from Cherokee Indians. So far a dead end.

Joseph & Sarah's son, Jacob, had his biography written in Goodspeeds 1887 History of Tennessee - Macon County. He stated his parents were "Joseph and Sarah (Stephens) Eller." "Mrs. Eller died September 25, 1846. Mrs Ellers' father was with Gen. Jackson in the Indian war and participated in the famous fight at Horse Shoe Bend on the Tennessee River, where he was killed."Jacob Eller was 22 when Sarah died - therefore I believe he would have known his mother's maiden name.

A cousin obtained from the National Archives the complete rosters of all the soldiers that participated at the Battle of Horseshoe Bend, which was on the Tallapoosa River in Alabama. The only person with the last name of Stephens (Stephen) was "Joseph Stephen Fell 27 March 1814 Mounted" He was in Col. Gideon Morgan, Jr's Regiment of Cherokee Indians. Most of the men on the roster had typical Indian names eg. The Bear, The Bark, Ball Ketcher, etc.. There were also some with English names. Of those, several are known to be Cherokee Indians, eg. Gideon Morgan, George Guess (known as Sequoia), etc.
